Downtown Puyallup’s CaskCades taproom opened Thursday with a menu of gourmet hot dogs and 33 taps serving Northwest-focused brew, wine and cider.
The 40-seat space at 106 N. Meridian comes with a kid-friendly atmosphere that its owners hope will encourage families to hang out together.
“A big part of our model is to get folks to interact with each other instead of staring at their phones,” explained co-owner AJ Wiltrout.
The taproom has electronic arcade games, pinball, card and board games, coloring books and a kids menu. Snoqualmie Falls Brewing root beer will be on tap, and an array of kid-friendly juices will be served.
“We wanted to build something our kids could come to, too,” said Andy Gaine, Wiltrout’s business partner. The pair met while working for electrical contracting companies.
In addition to occasional appearances from their kids, their wives, Andrea Gaine and Melissa Wiltrout, will work at the taproom.
The menu will feature a dozen steamed hot dogs, priced around $4 to $6. They’ll offer a wide range of gourmet toppings, including traditional versions, plus oddities such as a S’mores-themed hot dog, another with cream cheese and one more with a double whammy of Sriracha and habanero sauces.
They have carefully sourced ingredients to make their own version of a traditional Chicago dog. They’ll use steam-heated Red Hot Chicago franks on a poppy seed hot dog bun, served “dragged through the garden style” with a pickle spear, squiggle of yellow mustard, chopped onions, a tomato slice, sport peppers, neon-green relish and a sprinkle of celery salt.
They’ll also offer pot pies and shareable snack plates that include a charcuterie plate, fruit-and-cheese plate and hummus plate.
The opening tap list will include South Sound craft beer favorites Wingman Brewers, Half Lion Brewery and Puyallup River Brewing. For those who eschew fancy beer, they’ll have cans of Rainier. They also will have wine and cider on tap, plus a gluten-free beer from gluten-free brewers Ghostfish Brewing Co.
They plan a brew lineup with little repetition.
They plan to offer a mix of IPAs, ambers, lagers and more.
“We want folks to come in, and, instead of having what they had last week, they’ll have to try something new,” said Wiltrout.
