The Australian Southern Rocklobster is native to the coastal waters of Southern Australia. Fed by chilled, nutrient rich waters uprising from Antarctica, this lobster is a slow growing, selective feeder. "Cold water yields premium flavor."
At 4 to 7 pounds each, the Australian Rocklobster is a hardy sea creature and unlike the American lobster which often becomes less desirable the bigger it gets, the Australian Southern Rocklobster maintains its culinary appeal with its large size.
The Australian Southern Rocklobster meets some of the strictest environmental standards in the world. Each lobster is individually tagged and fully traceable to ensure its authenticity and origin. These pot caught lobsters are harvested using special equipment and procedures to allow undersized lobsters and unwanted by-catch to safely escape and to protect the antennae and limbs of all harvested lobsters. This "Clean Green" program is an integrated management system incorporating "pot to plate" environmental, work place and food safety, quality and animal welfare standards.

Shenanigans' chef Joel Mertens wrote to say, "The lobsters I'm doing will include two glasses of champagne, truffle maytag rissoto, wilted arugala, and Triple Layered Chocolate cake from our in house pastry chef Kat Baublits."
