Coming to downtown Tacoma in January - Savor, a creperie that will operate at 1916 Pacific Ave. Think of this creperie as the kind found all over Vancouver B.C. - small cafes where diners order at the counter and take a table as their crepe is made to order on a griddle.
Owner Tom Vigue is new to Tacoma, but not to restaurants. Before moving here this year, he operated Chef Appeal in Richmond, Va., and worked in corporate chef positions with hotels and senior communities before and after he owned the restaurant and catering company.
Expect a menu of 15 savory and 10 dessert crepes. Vigue has not yet set prices, but he described an affordable menu catering to students as well as downtown workers.
I asked him to describe his crepes and he said he’ll cover the traditional territory using a wheat-based batter for the thin pancakes that are stuffed with savory or sweet ingredients. While some creperies use crepes as something of a tortilla to create roll-up wrap sandwiches, Vigue said his style of crepes will be more traditional European - the kind he developed an affinity for last year during a visit to Amsterdam and Paris.

He described a broad range of flavor combinations: Roasted butternut squash and candied nuts, ham and gruyere, even a moo shu pork themed crepe. He’ll have a lemon crepe, a ricotta crepe and mixed berry crepe with ginger and mascarpone. “I’ll have the classic Nutella crepe, of course,” he noted.
I asked about weekend dinner service, but it doesn’t appear the creperie will cater to the late-night weekend crowd. Savor will operate on weekdays from 11 a.m.-7 p.m. and from 8 a.m.-5 p.m. Saturdays. He said he may expand the hours later.
Those who follow my dining coverage will be thankful for the opening - it means I'll no longer be pining on the TNT Diner Facebook page about Tacoma needing its very own creperie. I will, however, continue to pine for that elusive Ethiopian restaurant we need.
