My vegetarian friends, I'm always looking out for you. Opened April 18, Savor Tacoma Creperie has brought a style of dining that downtown Tacoma much needed: stylish, quick dining and something sure to be a hit in that stretch of downtown - vegetarian friendly dining.
Owner Tom Vigue, who is a newcomer to Tacoma, but not to restaurants, has designed a menu of more than two dozen crepes – about a dozen each of savory and sweet, along with a half dozen crepe scrambles. Here's the bonus - more than half the menu is vegetarian.
Some chefs treat crepes like tortillas, using them as roll-up sandwich wrappers. At Savor, the crepes were served as folded-over envelopes, warm pockets spilling sauteed veggies, melted cheeses, saucy drizzles and fresh herbs. The crepes were lightly oiled with a tender bite. Vegetarians aren't relegated to plain Jane configurations. Check these out: The duo of pears and aged gouda ($8.50) zigzagged between sweet and savory; a scattering of fresh thyme turned the crepe earthy. The sauteed spinach crepe ($8.50) was a tangle of earthy-cheesy flavor with goat cheese, garlic and walnuts. A hearty red pepper scramble crepe ($7.95) also would appeal to vegetarians. Tucked into the crepe were eggs scrambled with cheddar, peppers, onions, mushrooms and tomatoes. For dessert, a mixed berry crepe ($8.50) spilled raspberries, blackberries, strawberries and blueberries that had been macerated in an assertive ginger syrup.
A note to vegans - the crepes are not easily amended for the vegan diet because dairy is used in the crepe batter. However, Vigue said he's considering coming up with a menu item that would include vegan-friendly fillings, but rolled up inside a romaine lettuce leaf instead of a crepe.

For pescatarians or flexitarians, here's something to try. One menu winner left an impression of a Sunday morning bagel fashioned into a crepe. Super salty smoked salmon was layered with capers, red onions, chives and a smear of creamy boursin cheese ($12.50). The only thing missing was the Sunday paper.
The cafe is casually themed with a fast-service setup – diners order at the counter. The smart decor features artwork of Tacoma landmarks wrapped around mint-green walls that coordinate with the formal attire worn by the staff – white dress shirts with green ties. Cooks were dressed in formal chef’s whites, complete with tall toques.
For your dining calendar - the "official" grand opening celebration for the two-month-old restaurant will be June 21-22.
