Two things I've always thought the region could always use more of - bagels and food trucks. Find them together in the Budha Bear Bagel Truck, now serving Mondays-Thursdays on the campus of University of Washington Tacoma.
The truck's menu sported a half dozen bagel sandwiches and soup (see menus below). Students were walking away from the truck with big portions of mac and cheese for a college friendly price of four bucks.
The Puyallup-based truck began serving on campus three weeks ago. A first-bite of a smoked salmon bagel ($8) found promise, but I'd ask next time for double (or triple) the capers and red onions. When biting into the velvety squish of smoked salmon and cream cheese, I want a balance of briny, pungent snap from capers and red onions. In the plus column? Bonus points to the truck for 10 varieties of bagels. I'll be back for that mac and cheese.

ANOTHER NEW TRUCK: And speaking of food trucks, earlier this week I told you about Bella Amore, the South Sounds's first mobile truck serving Italian sandwiches (meatball, sausage and caprese, plus pasta and salad). Find the Tacoma-based truck at the old post office building near 12th and A Streets. Gibson's Frozen Yogurt Truck will be serving at the same spot tomorrow.
