There are as many categories of rib cooking as there are ways to describe Northwest rain. But one thing is for sure, it’ll be raining ribs at LeMay-America’s Car Museum on Saturday. The first Smokin’ Hot Ribfest will be from 11 a.m.-5 p.m. on the lawn at the car museum.
Organizers described a wild card menu where anything goes. That means a broad variety of ribs – from pork spareribs to baby backs to beef ribs – will be on the menu alongside beans, corn bread, potato salad and coleslaw.
Attendees will have a say in the competition, which is an informal gathering, not a barbecue society sanctioned event, although organizer Cindy Stearns would like it to become one.
Anyone with a little cash and an affinity for getting messy with a plate of ribs gets a vote for their favorite ribs or booth.

Four barbecue companies will cook a variety of ribs and sides, with prices depending on whether you buy a single rib or a full meal plate (prices will be $3-$10).
A portion of proceeds goes to Tacoma Rescue Mission, representatives from which will be cooking ribs and corn bread at the rib festival.
Other barbecue companies cooking Saturday include Bonanza BBQ and Catering from Puyallup, which will slow smoke pork babybacks, pork spareribs and beef spareribs over cherry wood. Also cooking will be Big Daddy's Family BBQ from Enumclaw, which will have spareribs, beans, potato salad and other items. Up in Smoke from Auburn is expecting to cook ribs and corn.
