Pour at Four, the wine bar and restaurant in Tacoma’s Proctor neighborhood, has a new owner.
Steve Smith purchased the wine bar and restaurant from Mark and Susan Merrill, who have operated Pour at Four since 2004.
Smith plans menu changes and has secured a liquor license to sell cocktails. He also plans weekend brunch services on Saturdays and Sundays.
Smith hired Patchen Gallagher, a chef who previously cooked in Portland and Vancouver B.C., to execute a new menu, now in the works.

Smith described more robust dinner offerings. “People go there for wine and the food is an afterthought. I want diners to feel they can go there for dinner. I want to be a first choice for dinner,” said Smith.
Added Smith, “We are embracing the wine concept, and we’ll continue with that.”
The Lakewood wine and cheese store Vinotique has closed. The 25-year-old business opened at 7304 Lakewood Drive W. in 1999 and operated in another location before that. The business was owned by Paz and Thomas Morris with business partner Christian Rubio.
Paz Morris wrote in a farewell email to friends and customers, “Thank you so very much to each one of you. We had a wonderful run. Vinotique has been in business for over 25 years and you were part of it. Now it is time for us to move on, to follow our dreams. The last offer to buy Vinotique didn't go through, so we are going to move forward with our plans to be able to move to Chile. We had a wonderful experience owning Vinotique.”
