A second conveyor belt sushi restaurant is coming to South Hill this spring.
Sushi Station will open in the Sunrise Village Shopping Center, which also is home of the Ram brewery restaurant. Sushi Station’s opening comes on the heels of the December opening of Sushi Land, a conveyor belt restaurant that opened just a few miles away, also on Meridian. I wrote about that restaurant’s opening here.
Manager David Lim and owner Gi Hwan Chon will operate Sushi Station. They’ve hired several sushi chefs to rotate through the sushi counter, which will anchor the center of the restaurant, as is the case with most sushi restaurants that offer sushi that roams around the restaurant on a conveyor belt. It’s a form of kitschy sushi theater and diners love it because it’s a fast style of eating, it provides movement and interest and what’s not to like about food that roams around on a conveyor belt (other than making sure you don’t grab something that’s circled the room 45 times, ahem). Some call it conveyor-belt sushi, others call it sushi-go-round or kaiten zushi.
I looked in the windows yesterday, and it appeared that booths and the skeleton of the restaurant were starting to take form, but it looked as if they might be several weeks out from opening. Lim’s optimistic opening date is week after next, but he believes it could take longer, he told me today. He'll know more after scheduled inspections happen later this week. The restaurant may end up opening without a liquor license. As of today, the application hasn’t posted on the liquor control board website. Lim said they have applied, but they have not yet had the initial interviews.

When the liquor license is approved, Lim said the restaurant will serve an assortment of Japanese beer, sake and a Korean alcoholic beverage called soju that Lim said is becoming more popular with Americans. ‘It’s a Korean liquor like sake, but a little stronger. It’s almost like vodka, but with flavors.” He said the restaurant will offer a wide assortment of that beverage.
As for the sushi: he said expect to see conveyor belt sushi favorites: from California rolls to crab rolls. “Our chefs will come up with their own sushi rolls,” said Lim. Plates will be priced from $1.50 to $4. Hot menu items can be ordered, too. They plan to offer skewers, katsu, teriyaki and bento boxes.
This is the first venture for Chon, although he has been a partner before in other restaurants, he said.
In other Sunrise Village news: Pizzeria Fondi, the restaurant I wrote about here, closed last month in the Sunrise Village shopping center in Puyallup. The restaurant didn’t even make it to its first anniversary.
