The Proctor-area restaurant from Seattle-based Chow Foods now has a name — and a tentative opening date.
It will be either a February or March 2016 opening for Cooks’ Tavern.
As I reported in June, the restaurant is from Peter Levy, owner of Chow Foods and the longtime restaurateur who owns Seattle’s Hi-Life, 5 Spot, Endolyne Joe’s and TNT Taqueria.
Said Levy via email, “We'll be serving breakfast, lunch and dinner with a full bar and about 12 beers on tap. We will be celebrating cooks — past, present and future — with an ever-changing menu that will focus on foods of the Americas.”

Levy has long wanted to expand to Tacoma. He looked for about 15 years for just the right building and found it at North 26th and North Alder streets, which previously was home to dog-grooming and nail salons, and is close to the Rosewood Cafe. Work started in early summer and is expected to wrap up no earlier than February, said Levy.
Levy described the building earlier this summer: “It’s beautiful, it’ll provide a really comfortable neighborhood gathering place,” he said. “It’s got its challenges with some structural issues, but I’m a sucker, I love old buildings. I got myself a doozy here. It was built in 1925.”
Levy’s restaurant company is known for creating neighborhood-centric eateries, each with its own character. The Hi-Life is a Ballard neighborhood joint built into an old firehouse. The 5 Spot is a Queen Anne restaurant specializing in regional American food. Endolyne Joe’s is a West Seattle cafe serving updated American classics and TNT Taqueria is a tiny taco joint in Wallingford.
Speaking of Seattle restaurant companies, several are expanding to Tacoma between now and late next year. Seattle-based Elemental pizza opened in October in downtown Tacoma. The owners of Seattle’s Rhein Haus are opening a Tacoma outpost in the Stadium neighborhood in late 2016. And owners of Seattle’s Vostok Dumpling House are still working on their 1126 Commerce St. dumpling house. Top Pot Doughnuts also announced it will open in the Proctor Station development.
