The long-dormant Chevy’s Fresh Mex building near Tacoma Mall will be a restaurant again, but it is taking longer than expected to get the doors open at NYP Bar and Grill.
As I reported in April, the restaurant originally was scheduled to open in mid-May, but now expects a June-July opening.
“All said, we are pushing the needle as best as we can to get the doors open,” said director of operations Ryan Zawisza, who cited construction setbacks due to the age and condition of the building that sat dormant for three years after Chevy’s closed.
The 150-175 seat restaurant will come with a modern-themed dining room and a menu similar to the other NYP Bar and Grills. The restaurant group was founded by Mike Novak nine years ago in Lynden, near the Canadian border. Next came locations in Bellingham, Seattle, Everett and Burlington. Tacoma’s opening will be store number six, with store seven coming to Maple Valley after the Tacoma opening.
The restaurant originally was called New York Pizza Bar and Grill, but has changed its mission since then. The pizza is now described as a more ubiquitous “craft” style. The menu focus is quite wide, with burgers, sandwiches, pastas and a handful of entrees (the menu looks like something like what you’d find at the Harmon Restaurant and Brewery in downtown Tacoma).
The company’s focus is on using products from as many Northwest food companies as it can. There’s Scotch ale beer, from Bellingham’s Boundary Bay brewery, in the pizza dough. Meat pizza toppings come from Seattle’s Cascioppo Brothers. Draper Valley, the chicken farm, also is listed on the menu; as is Hempler’s, the Bellingham bacon company. The tap list will feature 24 beers, all from the West Coast.
The restaurant will serve lunch and dinner daily, plus happy hour and weekend brunch. Prices are solidly in the mid-level restaurant range, with burgers between $11.35-$14.75; entrees from $12.85-$16.55; pizzas at $12.75-14.75 for the smaller size and $22.25-25.50 for the larger sizes listed.
