What’s going on with Lunchbox Laboratory in Gig Harbor? Here’s what we know so far

Lunchbox Laboratory has closed for good, according to signs posted on its front doors.

The restaurant at Point Fosdick Square in Gig Harbor previously had a closed sign on its door in January. Then in early February it had a “for sale” sign posted outside.

In 2015 the restaurant opened as part of the Lunchbox Laboratory chain restaurant at 4901 Point Fosdick Dr. It offered different burgers and bar food.

Then it got new owners toward the end of 2022.

The new owners updated the menu with several Korean dishes, such as hot-stone bibimbap, sweet and spicy fried chicken with rice, and a chicken katsu sandwich, The News Tribune previously reported. They also added a burger with roasted garlic and pickled jalapenos.

The owners have not responded to the Gateway’s request for an interview.

City records don’t show plans for what the space might be next.

City Administrator Katrina Knutson said she did not have any details about the closure. Miriam Battson, president of the Gig Harbor Chamber of Commerce, also did not have any details.

The business didn’t appear to file any state documents last year and Lunchbox Laboratory of Gig Harbor has been dissolved as of Jan. 3, according to state records.
