Pizza, burgers and Indian cuisine: Puyallup’s new food truck pod opens this week

Three new food trucks are coming to Puyallup this week.

Residents will be able to get pizza, burgers, Indian food and more at a new pod, Pind Kohala, at 1824 S. Meridian. Raj Singh, one of the owners of the pod, said they are aiming to open the trucks Wednesday or Friday.

“We got all our permits ready to go,” Singh said. “We’re trying to get everything ready and trying to prepare food properly starting [Tuesday] evening and then we will see how soon we can open.”

One of the three food trucks, Mocha Stop, will serve coffee. Another, Little India Puyallup, will serve Indian food and a third, Backyard Pizza and Burgers will serve pizza and burgers “with an Indian twist.”

“It was my dream project, to be honest,” Singh said. “I wanted to have something [where], like, the whole family can come and parents, with their kids, they can enjoy a variety of food there.”

Singh has been in the food business for over 20 years, and owns two brick-and-mortar businesses in Tacoma’s Freighthouse Square: R.J.’s Burgers and Little India Express. He came up with the idea for a food truck pod in Puyallup in 2022.

“I was traveling to like, California, Oregon, all the time, and I saw these food truck set-ups there and I thought: ‘We don’t have one in Washington,’” Singh said. “It just came into my mind and I said, ‘Let’s get a bunch of different food trucks in one spot and then make it, like, a food truck park.’”

Singh also said they are looking to add more food trucks down the road, such as a truck for Mexican or barbecue food. For now, he’s just excited to open the three-truck pod and see the community’s response.

“We’re local and we live in Puyallup. We want the local community to come and try our food,” Singh said. “We would like to give back to the community.”
